Zoë Harvest Salad & apple balsamic vinaigrette
Ingredients
Harvest Salad
- 4 cups Lightly Packed Baby Spinach Leaves
- 4 cups Lightly Packed Mixed Greens
- Cooked Quinoa (1 cup dried)
- 1/2 Medium Diced Red Onion
- 1 Medium Diced Tomato
- 2 Diced Apples
- 1/3 cup Roughly Chopped Almonds
- 3/4 cup Crumbled Feta
- 1/2 cup Dried Cranberries
- 1/3 cup Pumpkin Seeds
Apple Balsamic Vinaigrette
- 1/4 Cup Zoë Extra Virgin Olive Oil
- 1/4 Cup Zoë Apple Balsamic Vinegar
- 1 tbsp Dijon Mustard
- 1/2 tsp Salt
- 1/8 tsp Ground Black Pepper

Instructions
1. Start by cooking the quinoa according to the package directions (1 cup dried needs 1.5 cups water)
2. Prepare remaining ingredients: Spinach, Mixed Greens, Onion, Tomato, Apples, Almonds, Feta, Cranberries & Pumpkin Seeds
3. Once the quinoa is cooked, transfer it to a medium sized bowl and place it in the fridge to cool slightly
4. In a large bowl, add the spinach and mixed greens
5. Toss in the remaining ingredients
Vinaigrette
1. In a glass measuring cup, pour Zoë's Apple Balsamic Vinegar - Whisk in dijon, salt & pepper
2. Slowly pour in the Zoë Extra Virgin Olive Oil while whisking quickly to create a nice emulsified vinaigrette
3. Drizzle half of the vinaigrette into the salad bowl, and toss everything together
4. Keep the other half in the fridge for your salad tomorrow!
